Sherry is a barrel-conditioned lightly fortified (with grape spirit) wine whose style is determined by a secondary yeast action (flor) in the barrel, and by many years of barrel ageing. The barrels are replenished with younger wines (the solera) to maintain a consistent flavour and style, a solera can therefore contain wines that are hundreds of years old. |
