Corazon de cordero a la brasa – grilled lamb’s heart, beetroot jus, capers and watercress

Carpaccio de bacaloa – salt cod carpaccio

Empanada de raba de toro – Braised ox tail in puff pastry with vanilla mash




Venado a la brasa – grilled haunch of venison wrapped in jamon, truffled mash, wild mushrooms

Zarzuela de pescado y marisco – langoustine, mussel and tuna stew thickened with almonds and tomato

Canalones – wild mushroom and spinach canelones

Cocido madrilèno - poached brisket, chicken, chorizo, tocino, morcilla with chickpeas, cabbage, carrots, salsa and broth
